Hi! I’m Ize and I produce amazing honey right in my own backyard! We have over 5 bee colonies, each with their own unique honey.
What makes our honey so unique is that it’s Polyfloral. Polyfloral can also be called wildflower honey, because the nectar the bees gather to make the honey is from many different types of flowers. The taste will change from harvest to harvest and from season to season based on what plants are flowering during foraging. We harvest multiple times a year and each harvest has its own unique flavor. The early harvest typically is thinner with coloring more towards yellow. The late harvest is typically thicker and coloring more towards dark amber. If it is stored properly (in a dark cool place) it will last for a very long time. If it starts to crystallize don’t get rid of it because that does not mean it is bad. To reliquify, heat a pan of water to approximately 150 °F then remove pan from heat, place the jar of honey in the water, and remove once the honey crystals are gone.
